Consider listening to Blackmore's Night. It's a band formed by former Deep Purple Guitarist Ritchie Blackmore, and features his wife (I forget her name), as the lead singer. It's really kind of an acoustic, classical band, very melodic and easy to listen to. Here's a youtube link, but you could also just go to youtube and type in the bands name yourself.
